Speaking the Language

I went to bed late last night, it was easily midnight or beyond, and as I lay there on the edge of sleep, I heard an unaccustomed sound. It sounded like…birdsong. I listened closely. It was, indeed, birdsong. And not just little chirps or the otherworldly radar sounds of an owl.

There were two birds, calling to one another, long, complicated tunes that sounded like they were being played on a glass harmonica.

My first thought was: Nightingale.

I thought of those lines from Shakespeare’s Romeo and Juliet:

Nightly she sings on yon pomegranate-tree:
Believe me, love, it was the nightingale.

Imagine knowing, eyes closed and in a darkened room, what time of day it is just by the type of birdsong on the air.

I thought to myself that I had no real idea what a lark sounded like, nor for that matter, a nightingale.

Rather, it was night time, the birdsong didn’t sound owl-like. It wasn’t the sharp chirps of the ever-present flock of sparrows that live in the vines on our house, and I know nightingales sing at night. Deductive reasoning, not actual familiarity.

But do they sing in autumn?

Yes, apparently, because they are on a migratory route to the south for the winter.

Research has shown that songbirds share similar ‘gene products’ for vocalizations that humans use for speech. So what we hear as song might be, for the birds, a rich conversation, good as a book, engaging as a movie. Better, probably, because it’s theirs.

After all, other research has shown that dolphins call each other by name, using a ‘signature whistle’ to identify themselves, and using others’ signatures to call individuals. And let’s not forget the mice who ‘sing’ to each other in ultrasonic melodies, and have vocalization brain patterns that resemble humans – and songbirds.

Think of all the conversations we are missing because we either can’t hear them, or don’t speak the language, or have forgotten how to listen.

It might seem like the project to take ice to Antarctica is the very definition of redundancy. Like taking coal to Newcastle or turning on the lawn sprinkler while it’s raining.

But this ice endeavor is more like trying to archive some of the world’s most ancient books even as the ink rapidly vanishes from all the pages.

Ice from the world’s glaciers contains a wealth of information about the planet’s history.

Samples taken from glaciers around the world can be used to create computer models of past climates and how the climate has changed over time. Many samples have been taken at sites in Antarctica and Greenland – but far fewer have been analyzed at the various glaciers around the world.

Comparing polar ice, which can be hundreds of the thousands of years old, to glacial ice from mountains can reveal the impact of human activity.

CO2, human-generated pollutants, pollen: Whether it’s on the Andes, the Alps, the Rocky Mountains, or the Himalayas, whatever was in the air and water when a glacial layer formed is trapped and frozen in place – at least, until the ice melts.

And as everyone knows by now, the ice is melting.

“In some of the warmer areas of the world the surface water is starting to melt. It then trickles all the way through the ice, taking with it the information from the surface so it’s smearing out any record that we might be able to take from the past,” Robert Mulvaney, a glaciologist with the British Antarctic Survey, explained to the BBC.

The first ice cores will come from the Col du Dome, a glacier research site that sits at 4350 m (14,200 ft), just below the summit of Mont Blanc in France. The French National Centre for Scientific Research, part of the new ice storage project, measured temperatures inside the Col du Dome glacier in 1994 and again in 2005, and found a rise of 1.5°C.

Commercial freezer storage would be an interim option, but in the long-term, could be prohibitive in terms of cost as well as the potential for disastrous power failures.

The new Antarctic archive for glacial cores is set to be established at the Concordia Research Station, a French-Italian base that is manned year-round.

The archive itself will consist of ice cores sealed in bags, and stored in a giant frozen trench 10 m below the surface at a steady temperature of -50°C.

The hope is that this will keep the archive safe for future research over the course of the next decades and perhaps even centuries.

Of course, the main challenge to the project – besides warming glaciers – is funding. The glacier archiving project, by definition, will not be yielding the kind of short-term results so popular among funding agencies and governments.

In a way, it’s fitting that the focus on short-term results and benefits is the main hurdle to keeping the glacier ice cores cold – after all, a focus on short-term benefits and profits is part of why the glaciers are rapidly melting in the first place.

 

 

Leafing Out

There are few places in the world, if any, that aren’t touched by human activity, including places with no humans. And one of our chief human activities over the past couple of centuries has been the transfer of carbon from reservoirs deep within the planet out into the atmosphere.

We’ve been re-creating the environment during this industrial dream. Like a dream, we aren’t always conscious of our decisions and the impact they will have as we weave the story forward.

Several recent studies show that the phenology of leaves around the world, i.e. the annual cycle of vegetation changes, has dramatically altered since the mid-20th century.

It might not seem particularly important if the first vegetation leafs out a week earlier every year, or drops a week later in autumn.

But a study published in Nature Climate Change measured severe phenological changes on 54% of the planet’s land surface between 1981 and 2012, with resulting shifts for entire ecosystems.

Warmer temperatures, new rainfall patterns and increased atmospheric carbon are altering the rate of energy exchange between land and atmosphere in complex ways that we don’t yet entirely understand.

Increased carbon uptake due to earlier springs and later autumns mitigate climate change, at least in theory (and leaving out the issue of deforestation, of course).

But as it turns out, phenological change alters different forests in different ways. Temperate forests react differently from boreal forests, and the overall impact on a global level is as yet unclear.

Truly long-term studies of leaf-out times aren’t widely available, but the Marsham family of Norfolk, England, kept records of leafing and flowering times of estate woodland plants from 1736 to 1947.

By matching historical temperature records (back to 1772) to the family log, researchers at the University of Edinburgh and Biomathematics & Statistics Scotland found that while a warmer autumn causes early leafing species such as birch to take longer to come into leaf the following spring, while late-leafing species, such as oak trees, seem unaffected by autumnal temperatures.

These citizen scientist observations allow researchers to test predictions regarding the effects of temperature on leaf cycles and woodland environments.

What is clear on a global scale is that the countless organisms with life cycles synchronized to vegetation cycles are being dramatically affected.

Meanwhile, we continue to emit carbon sighs during our long industrial dream of plenty, not yet knowing where it will lead, or how the earth will look we will wake up.

Maui Mixology

I’m not sure what I was expecting from the poolside cocktail mixing class at the Hotel Wailea on Maui – the reinforcement of a few basics, maybe a couple of exotic ingredients in a familiar drink. We’d signed up the day before for the mixology class, but by the time it rolled around at 11 a.m., we felt like we’d already had a long day of intense touristing behind us, working hard to get the most out of our vacation.

We’d spent the morning making the drive from the coast of Maui up to the summit of Haleakala to watch the sunrise from 10,000 feet above the ocean, high above the clouds and slopes of Maui. We’d gotten up at 3 a.m., watched the 7 a.m. sunrise, and gave ourselves a pat on the back for getting up early and seeing such a spectacular sight as a reward.

Sometimes having fun requires a genuine effort.

Kerry, the beverage wizard who was teaching the mixology class, blithely dispensed with cocktail basics within the first ten minutes. What she really wanted to talk about was a lesson altogether more fundamental: the place in life where we take what we have on hand and make something wonderful. Less hard work, more appreciation.

For example, simple syrups. Sure, anyone can buy a simple syrup – that basic sweetener, water and sugar cooked together. And adding a flavor to that concoction is nothing new.

What I liked about Kerry’s approach was the notion of making just about anything into simple syrup, the spices or herbs or flowers or chilis or leaves that are in the kitchen, in the refrigerator, in the garden or blooming on the balcony. I especially liked her low-heat approach to processing these ingredients – in a blender with water and sugar, and then some time sitting in the sun before straining – adding sunlight to maintain pure flavors and come up with a lavender mojito, or a hibiscus margarita.

She introduced our small class to the lovely Pau Vodka, a Maui-produced spirit based on pineapple. Now, pineapple was introduced to the Hawaiian islands by the Spanish, so technically it’s not an indigenous plant – but Hawaii is the only U.S. state which produces pineapple. Pineapple cultivation might be a fraught subject, but the vodka was a delight, with a hint of the fruit’s tangy sweetness.

(Ocean Vodka is Maui’s other locally-produced vodka, one we didn’t try – and one more reason to go back to the island. Another would be the pineapple wines of the Tedeschi Vineyards.)

Kerry also had a number of hydrosols – the bi-product of essential oil distillation and condensed water left over after steam or water distillation – on hand. Not something I’d likely produce on a regular basis in my own kitchen, but easy enough to get at the local health food store.

After a morning of trying hard to get the most out of the day, the class was a lesson in taking life as it comes and making the best of what’s right in front us.

Back home and thoroughly bundled up against the Arctic temperatures both outside and inside our old stone house, I’m trying to do just that.

I think I’ll start with this:

 

 

 

Fragrant Whiskey Infusion

The plan was to go to a bar here in Denver that, from its name at least, promised to have a good selection of whiskies.IMG_0097

And indeed, the Whiskey Bar on Larimer Street had a big selection of whiskies and a strong theme of whiskey throughout. It was also just a little bit loud for the kind of conversation we were having – a visit with an old friend who we hadn’t seen in years, catching up on life. IMG_0084

So we wandered out and into the place right next door, which promised wine and cigars. The sweet fragrance of rich cigar smoke wafted through the open door (who knew Denver could be so warm and sunny on a Sunday afternoon in January?), and once inside the Palma Cigar and Wine Bar, we knew we were in one of those true local gems I always hope to find while traveling, but rarely do.

Besides serving a range of local Colorado wines (surprisingly good), the shop is home to a workshop for the hand-rolled cigars that other patrons were smoking. IMG_0096

Now, what does this all have to do with whiskey?

As it turns out, some of the cigars were flavored. And one of the those flavors was, you guessed it, whiskey. So of course we had to try one.

I can drink whiskey any old day. How often do I get the chance to smoke it?IMG_0102

I do favor the very occasional cigar, especially in good company, in good surroundings and with a fine beverage at hand.

All these criteria were met, and the cigar, rolled by master cigar maker and bar owner Clay Carlton, was a treat of smoky whiskey-tinged sweetness. And yes, we bought some to take along for the rest of the trip.IMG_0093

There were these bottles of whiskey-roasted whole coffee beans, another product of the shop – we didn’t try any coffee, but the scent of the beans was heady and aromatic with whiskey.

The shop’s other potential treat which we left unsampled was the barber’s chair at the back of the shop. Full haircuts available while you smoke. Real indulgence. IMG_0088

One of these days, the barkeep (the pleasingly-named and very knowledgeable Mr. Valentine) told us, the bar would have a full liquor license, and whiskey proper would be served.

Guess I’ll have to come back to Denver.

One Everything With Snow

I have a friend in New York City who sometimes calls me while she’s on her way to work. And every so often, I’ll be a long-distance eavesdropper to an order of her favorite breakfast bagel: A toasted Everything with cream cheese.

I know it’s just a bagel order, but having an Everything for breakfast has always tickled me with its notion of cosmopolitan inclusiveness. Even if the Everything is just bagel with a mixed topping of poppy seeds, sesame seeds, caraway, dried onion and garlic, and salt. No dill, rosemary, countless other herbs and additions, no waffles, eggs, tomatoes, potatoes, blinis, and so on…so technically, not everything.

But still, a lot of things.

I was thinking of that when I took this picture on my way home yesterday afternoon on blustery day of grey clouds, rain, snow, sunshine, patches of warmth and gusts of cold. The snow line looked like it had been drawn with a ruler, clouds covered the crest of the Jura in a thick topping of white, while a light drizzle fell over our house even as the sun shone.

So here’s my version of an Everything – the French Jura mountain range on a gloriously unpredictable Saturday afternoon in January. Delicious.

The weather over the last week has turned decidedly seasonal-appropriate, with a dusting of snow on the Jura range and wind that is anything but gentle.

The bird feeders are out, the garden is tucked in against the cold, and it was time for some comfort food.

Usually I make a simple stock using the pumpkin seeds scraped from the squash interior, carrots, turnips and celeriac, with a bunch of parsley. And I went to do exactly that yesterday, but found I was lacking a couple of ingredients, namely, the turnips and celeriac that give the soup its earthy, rounded flavor.

It was a lazy day, I didn’t feel like going to the store since the pumpkin was already roasting in the oven, so…I turned to whisky.

I sautéd onions until they were glassy, then deglazed them with a couple of shots of Famous Grouse (no, I wasn’t about to use one of my good single malts for this one).

The result? Subtle, but tasty. A fine alternative, and also, a new thing I hadn’t tried before, an added positive.

The recipe is a bit fussy for something as simple as cream of pumpkin soup, but it’s both tasty and hearty, so here it is:

Heat the oven to 200°C (400°F). Cut and scoop a flavorful pumpkin (I usually use a red kuri squash). Keep the seeds and scooped bits.

Without peeling the pumpkin, rub the flesh with olive oil, place it flesh-down in an oven tin, and let it bake until completely soft. Remove it, let it cool, and you should be able to peel the skin right off the roasted pumpkin.

While the pumpkin is roasting, cut up a couple of yellow onions and sauté them in a pan with olive oil. Once they are glassy, add fresh thyme and sage, stir a bit, then deglaze with whisky.

Add the roasted pumpkin to the onions with a ladle’s worth of the broth, stir for a few minutes, then strain the broth into the pumpkin/onion mix until you get the consistency you like. Give it all a stir to get anything sticky off the bottom of the pot, then purée until smooth. Add a few dollops of cream (or milk), then slowly add a couple handfuls of grated Gruyère cheese, stirring the entire time. Not too much or you end up with stringy cheese soup (unless you like that, then add more).

Salt and pepper to taste.

When I was a kid, I spent a lot of time (every possible minute) on the beaches of California. And one of my favorite activities was to run after the receding waves as far as I dared,, right up to where they were beginning another forward surge, and then turn and sprint back to safety. Or not, sometimes.

Getting away with nothing more than wet ankles counted as winning. Getting drenched or knocked over didn’t. Sure, it was a dangerous game. That’s what made it exciting.

One view I always wanted to see but never did (because I never dared or lost badly enough) was the dry sand beneath the roof of an oncoming wave. And here it is, courtesy of photographer Clark Little in his new book of waves, Shorebreak. Someone who dared to wait for the roof of water, and took a picture for the rest of us.

I worked as a translator on a film a few years ago that looked at the dry land beneath the waves, but in that case, the waves were frozen in icy forms. The film, Unter Dem Eis (Under the Ice) was a German-made documentary about the Inuit of the Canadian eastern seaboard and their tradition of gathering a bounty of winter mussels from beneath the frozen sea.

The harvest was only possible for a few hours a year, on days of extremely low tide when the sea beneath the ice retreated enough to allow for a quick expedition.

It looks like walking under water, and in a way, it is. Or was. As the Atlantic Ocean warms and there are fewer days when mussels can be gathered without the ice roof collapsing, the tradition is fading.

Still, it’s a vision out of a dream, walking, or sprinting, on the floor of the ocean, however briefly.

Warm Caprice

I was out running yesterday evening, and as I entered the last kilometer, I was brought up short by the sunset clouds reflected in a puddle. The air was crisp, but not winterly. It snowed on the mountain tops last week, but only briefly, leaving a sharp white line between the elevation where winter still lives above 800 m (2600 feet) and where we live in unseasonable warmth at 470 m (1540 feet).

There was the scent of early green on the dusk air, the sound of water running everywhere, and the official beginning of spring in the northern hemisphere is still a month away. On a hike last week I came across this bush bursting into full bloom, lambs frolicking, the air filled with birdsong, even as France and Switzerland are still in the midst annual ‘winter’ school holidays.

I’m debating whether to do some garden work. Sure, the fruit trees need pruning and this is the time to do that work. But it’s the other stuff – the perennial flowers that are already budding, the spring bulbs that are already handspan high.

Do I uncover the beds, untie the bundled bushes, get them ready for an early spring, only risk its capricious retreat?
